alkaloids, coumarins.


Dr. Penchev intends to explore different processes in
life systems

metamorphosis of pigments in plant cells
and the change of the concentrations during the
ontogenesis of the plants to determine the optimal
harvesting time.

items

of

Bulgarian

wild

and

introduced

oil

seed

plants

were

obtained
.



Oxidative

stability

of

the

oils

was

investigated
.

A

recommendations

about

preservation

and

processing

of

the

seeds

to

edible

oils

were

made
.



Lipid

components

typical

of

separate

varieties

used

for

estimation

of

taxonomic

belonging

of

the

oils

with

and

unknown

origin

and

falsifications

were

determined
.



Food

value

of

the

vegetable

oils,

on

the

base

of

content,

composition

and

structure

of

biologically

active

substances

was

estimated
.
